Sausage, Pepper and Onion Sandwich Recipe

For the Sausage:
  • 3 Hot Italian Sausage
  • 3 Sweet Italian Sausage
For the Sauce:
  • 14.5 ounce can of tomato sauce
  • 1 tablespoon olive oil
  • 1 small green pepper
  • 1 small red pepper
  • 1 small onion
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper (or more to taste)
  • ¼ teaspoon Kosher salt
For the Bread:
  • 4 to 6 Italian style sub or hero rolls
  • 4 tablespoons softened salted butter
For the Cheese:
  • 8 to 12 slices good quality Provolone cheese
  1. Pre-heat oven to 375 degrees, place sausage in a deep hotel pan or oven safe dish; add water to hotel pan or oven safe dish so that the sausage is not submerged but covered about quarter of the way up; place pan or dish in 375 degree oven and cook till this sausage reaches 165 degrees internal temperature (use a thermometer to check); cook for about 45 minutes turning every 20 minutes or so.
  2. Slice onion and peppers into medium to thin slices; cook over medium heat in a medium pan with olive oil, salt, pepper and paprika till onions are translucent and peppers are soft; add tomato sauce and lower heat to a simmer for 15 minutes.
  3. When sausage is fully cooked remove from water bath and slice in half long ways and place on a cooking prayed pan flat side (cut side) down; place back in oven for another 10-15 minutes or until browned.
  4. Slice the hero or sub rolls long ways and spread even amounts of butter on each roll; top each roll with 2 pieces of Provolone cheese and pace on a foil lined baking sheet in the oven (at 375 degrees) till cheese is melted and rolls are toasty but not overly crunchy; remove rolls from oven.
  5. Add 2 halves of sweet and hot sausage to each roll and top with onion, peppers and a little sauce; slice rolls in half and enjoy!
