Sausage, peppers and onions is a simple must have dish to have on your menu for any event where you want to please a crowd. In my house, we have taken the average sausage, peppers and onion sandwich and have kicked it up a notch. I take hot and sweet Italian sausage; cook them in a water bath to get them cooked through; sliced them open and pan sear them till they get a nice caramelized brown color and smother the sausage in a simple sauce of red and green bell peppers, onions and simple red sauce; all served on a toasted Italian sub roll with melted provolone cheese. Yes! This easy peasy Sausage, Peppers and Onion Recipe is soooo delicious, and easy to make, that you will want to Pin It, save it or print it to have handy for your next party or game day event.
There is something so comforting about this Sausage, Peppers and Onion sandwich… I am not sure what it is, but it reminds me of good times – happy events. Maybe because I always enjoyed them at the Jersey shore when I was a kid, or at the county fair when my husband and I lived in upstate New York for a brief time… no matter the reason this is one of my favorite comfort sandwiches. And I am sure it will be one of yours as well.
This Sausage, Pepper and Onion Recipe is so easy to make you might have to make some extra noise in the kitchen to make your husband or party goers think you are working harder than you really are… whom ever you make this recipe for is going to love it and you are going to put it into regular rotation on the, “must make again” recipe menu.
But before you get started here are a few tips:
Buy quality bread – the make or break ingredient of this whole recipe is the bread… you want a nice sub or hero roll that is a little crunchy on the outside but soft in the middle. No matter what, a quality roll is going to make or break this recipe.
Buy quality sausage – If you are new to reading my recipes and blog posts you may not know I am a Jersey girl through and through… when I created this recipe I was using Primo Italian Sausages. When I moved to Virginia Primo was not as readily available as it was in New Jersey, but luckily I joined Costco and is the only place I can find Primo Sausage in my area. But don’t worry if you don’t use Primo, just substitute with your favorite brand. Just wanted to give you a heads up of my preference, your’s may differ and I am OK with that J.
Buy yourself a quality Provolone cheese – If bread in the lynch pin than the cheese is the, “extra mile”, don’t skimp… you want a slightly sharp but not overpowering cheese.
Finally, In this recipe I call for the sausage to be cooked for 45 minutes in a water bath (or until internal temperature of the sausage reaches 165 degrees).
If you have never cooked with a water bath it is really easy to do… and as the name suggests it is just as simple as giving the sausage a little bath.
As you can see in this picture I used a deep hotel pan and placed the 10 sausages in the bottom of the pan and then added water.
The water should come up the sides of the sausage about a 1/4 to a 1/2 of the way up… do not submerge them.
We are not looking to boil the sausage but rather keep them nice and moist and prevent them from drying out.
If you are feeding a crowd you can mix the sausage, peppers and onions together in a catering pan and serve with toasty sub/ hero rolls on the side with melted cheese for folks to build their own sandwich… just increase the ingredients to match the number of guests you have. This recipe with serve 4 to 6 people… but is easy to double or even triple as you need.

- 3 Hot Italian Sausage
- 3 Sweet Italian Sausage
- 14.5 ounce can of tomato sauce
- 1 tablespoon olive oil
- 1 small green pepper
- 1 small red pepper
- 1 small onion
- ¼ teaspoon smoked paprika
- ¼ teaspoon freshly ground black pepper (or more to taste)
- ¼ teaspoon Kosher salt
- 4 to 6 Italian style sub or hero rolls
- 4 tablespoons softened salted butter
- 8 to 12 slices good quality Provolone cheese
- Pre-heat oven to 375 degrees, place sausage in a deep hotel pan or oven safe dish; add water to hotel pan or oven safe dish so that the sausage is not submerged but covered about quarter of the way up; place pan or dish in 375 degree oven and cook till this sausage reaches 165 degrees internal temperature (use a thermometer to check); cook for about 45 minutes turning every 20 minutes or so.
- Slice onion and peppers into medium to thin slices; cook over medium heat in a medium pan with olive oil, salt, pepper and paprika till onions are translucent and peppers are soft; add tomato sauce and lower heat to a simmer for 15 minutes.
- When sausage is fully cooked remove from water bath and slice in half long ways and place on a cooking prayed pan flat side (cut side) down; place back in oven for another 10-15 minutes or until browned.
- Slice the hero or sub rolls long ways and spread even amounts of butter on each roll; top each roll with 2 pieces of Provolone cheese and pace on a foil lined baking sheet in the oven (at 375 degrees) till cheese is melted and rolls are toasty but not overly crunchy; remove rolls from oven.
- Add 2 halves of sweet and hot sausage to each roll and top with onion, peppers and a little sauce; slice rolls in half and enjoy!
